The best training I ever had for interviewing people was hitchhiking around Australia for six months when I was 18. To be a successful hitchhiker, you need to bite your tongue, however offensive or outrageous the comments of the person driving the vehicle might be. That is the pact you enter into as a listener, as soon as a driver pulls over and agrees to help you with the journey, with nothing else in return. Similarly, as a journalist many years later I found that not interjecting or expressing an opinion gives the interviewee confidence to keep talking.
